Experienced Sous Chef required for busy hotel / pub which produces a cook to order modern British dishes. There are significant opportunities to progress for the right person.


  • As the sous chef, you will use your knowledge and experience of professional cooking to build and lead the kitchen team and efficiently run the kitchen.
  • You will work quickly and calmly when under pressure.
  • You will be responsible for establishing and controlling the kitchen budget.



Reports To:                             Head Chef

Responsible For:                     Junior Kitchen Staff

Budget Responsibilities:         Contribute to efficiency improvements to achieve year on year savings.





  • Develop, maintain and ensure compliance with kitchen operational and quality procedures.
  • Develop supplier relationships and audits to ensure consistency of quality and financial competitiveness.
  • Maintain stock records, stock rotation and waste minimization systems to maximize profitability and maximize stock ordering efficiency.
  • Communicate core and daily objectives to the kitchen team and liaise with the wider team to ensure smooth daily operation and customer satisfaction.
  • Promptly provide your line manager with any information which may impact the success in meeting core objectives.
  • Ensure that company systems are adhered to, maintained and improved.
  • Ensure kitchen equipment is maintained to a high standard and always remains ‘fit for purpose’.
  • Manage and deal calmly with unexpected situations and crises.
  • Help develop the junior chefs.
  • Ensure consistency of produce throughout the kitchen.
  • Supervise service ensuring presentation of food is compliant with restaurant standards.
  • Assist your co-Chefs in menu compilation and maintain an in depth knowledge of the full menu.
  • Support the management team to ensure targets are met with labour and food costs.
  • Compliance with food labelling and temperature controls.
  • To ensure minimum kitchen wastage.
  • To record methods and recipes in the company’s systems.
  • To follow the cleaning schedules for the kitchen and clean the section and other areas as directed.
  • To ensure stock is controlled and rotated.
  • To ensure that sufficient stock levels are maintained in accordance with anticipated sales.
  • To report any maintenance issues.
  • To comply with all company policies and procedures to ensure that all-statutory regulations are observed.
  • To comply with the conditions of the food hygiene policies.
Between £19,000 and £20,000 Per Annum
